People are leaving the game due to boredom, easy content, nerfed content, homogenization, and making the game more and more simple for noobs. I'm almost 100% positive the only expansion Blizzard made that brought in more subscriptions than it lost was Burning Crusade.
There was a time you could go to the Barrens and be harassed by Chuck Norris or Goldshire and see a giant Blood Elf sitting on top of the inn (you probably still can on an RP server).
Blizzard has made WoW into a queue system for everything, so you don't need to do any group finding or run to the dungeon. Thus, destroying the server's community and reliance on friends, guildies, and yourself.

WoW is the worst Multiplayer community ever
bullying
shitty talk all the times
ignorance
gold scam
etc etc
I play for 6 years but I have to quit after cata come out
because pay to play for then deal with a bunch of losers
who can only talk **** all the times is just stupid
especially in pvp no teamwork because nobody care
what they care is just blame someone else for their own failure
if you like this kind of environment when you play a video game go ahead..!!

Try a major city.
Can trial accounts access the who list? If you take out the line of text at the bottom that specifies who to show it should just show everyone. And at that point you can see where people are.

No one ever hangs around in the starting zones because there is nothing to do there
When you level up a few times you will get to go to higher level areas were there are more players
In stormwind and orgrimmar which are the main cities there are usually thousands of people
You get to go there at around level 10

Right now is typically patch/maintenance day, so that could explain some of it.
Also, as someone said, there aren't a lot of people who just hang out in the starting areas. Once you get to the main cities, you'll see tons of people.

Head to Orgrimmar if you are Horde, or Stormwind if you are Alliance.
that's where most people hangout, although good luck talking to anyone on a trial account (has too many restrictions)

Make a human character on the Moon Guard server. You can do the starting quests or just leave the walled area and follow the path. You'll see a ton of people. Make sure it's the moon guard server though.
Have fun
