I need gluten free wrap recipes. I have certain ingredients to work with. Do you know any that fit? see inside?

I need a couple different roll up appetizers. They have to be gluten free. So I thought using romaine as the wrap would work. I have a few things here to work with, do you have any recipes that will work with these ingredients: romaine lettuce, canned tuna, pickles, yellow onion, spinach, cucumber, cream cheese, mayo, ham, pepper jack cheese, green onions, jalapeno's, green peppers, Italian dressing and a few spices. Anyone have any recipes using any of these? Even if I need to buy a FEW more items just something that works. Thanks in advance

    Spread cream cheese on the ham, and put pepper jack and cucumbers on top. Roll into a romaine lettuce leaf.

    I'd make a stuffing from the tuna, yellow onion, spinach and cream cheese. Caramelize the onions and cook the spinach till soft if it's fresh. Then mix the tuna, creme cheese, spinach and onions. Then throw in your favorite spice to taste. I would personally use a grape leaf and brush with the Italian dressing and bake. Not sure how that would work with Romaine lettuce.
