Does anyone have any nice vegan recipes? (Plus a couple of other questions)?

I have decided to go vegan for lent, just to see whether I can do it. I am already vegetarian, and as a result have lots of nice vegetarian recipes, some of which are also vegan. However, I am struggling to find enough recipes which do not require milk, cheese, yogurt, etc. Obviously you can replace these with soya alternatives, but they can be quite expensive and difficult to find. So, does anyone have any nice vegan recipes which do not require soya alternatives? I eat most vegetables, plus lots of pulses, lentils, beans, nuts, etc, so don't worry about me not liking them.

Also, does anyone know good brands for vegan puddings? I can make vegan cakes, but these are not as good as non-vegan ones (I find they don't rise very well) and I miss chocolate, so does anyone know where I can get vegan chocolate, biscuits, cakes, etc?

One final question: will i lose weight going on a vegan diet? This is not the reason I am going vegan for lent, but several people have told me that I will lose a lot of weight going vegan, and I don't want to risk damaging my health.

No anti-vegan trolling please, this is why this question is in the Vegetarian & Vegan section, if you like meat that's great but don't force your views on me please. And any "clever" people posting "hilarious" answers like steak, burger, etc, you're really not funny when it's been done a million times before.

    have you tried vegan alternative? it comes in vegan chicken, beef, pork, venison, veal, lamb, shrimp, chicken nuggets, devidled egg, beets, crab alternative, alternative solid gumbo crackers.

    they go well in soup. they help to satisfy your need for proteins.

    example:

    one can of campbell's creamy tomato soup

    two lbs of chicken alternative

    pepper TO TASTE

    and enjoy

    You can find milk alternatives at most any store. Walmart even sells them (and they're notoriously non-vegan friendly). If you want to make something that requires eggs, use 1/4 cup of applesauce for each egg. It works beautifully.

    Really, it depends on what kind of meal you're looking for. Just google it. If you look on vegweb they have a MASSIVE collection of well organized recipes that are all vegan!

    There are some brands of vegan pudding that you can buy in cups, but those are obscenely expensive. If you buy jell-o brand pudding mix and make it with a milk alternative then it's vegan (I know, I was surprised too!). Ghirardelli brand chocolate chips are vegan (I think there may be some varieties that are not, so just read the package) and there's also the Enjoy Life brand that has all sorts of vegan cookies, chocolates, everything.

    It is possible to make your own vegan cakes and whatnot, but it takes a little bit of trial and error to get it right. Duncan Hines brand mix is vegan if you use cruelty-free substitutions, so that may save you some time and effort.

    Lastly, You may or may not lose weight. If you're overweight currently and you eat a healthy vegan diet, then yes, you probably will lose weight. If you're already a healthy weight or if you eat a terrible vegan diet (keep mock meats and vegan junk food to a minimum) then you won't lose weight, you may even gain some. Generally vegan foods are lower in calories and fat, so if you eat well then you'll be fine. You won't lose too much weight as long as you know how to take care of yourself (I used to have 6-pack abs and super buff biceps when I worked out AND was on a vegan diet, but then I got lazy, so now I'm just a thin, weak vegan).

    On a side note, don't think of this as trying it to "see if you can do it." Everyone can do it, you just have to have the compassion and the desire to be willing to go vegan.

    Pizza! Pizza is great!

    First, make some sauce:

    You need 1 (400g) tin chopped tomatoes, 1 or 2 cloves garlic, a little chopped onion (about 3 tbsp), tomatoe puree and Italian herbs.

    Saute garlic and onion for a few minutes. Add tomatoes and simmer to reduce (15 minutes). Add puree and herbs. Cool. Liquidise.

    Second, make some dough:

    You need 1 tsp sugar, 250 ml warm water, 350g strong whit flour (plus a little extra for dusting), 1 tsp salt, 1 tbsp olive oil (plus a little extra for oiling), some yeast (say, 15 g easy-bend dried yeast)

    Put yeast and sugar is a biggish bowl and add 50 ml of the water. Leave for 15 minutes. It'll go frothy.

    Mix the flour and salt. Make a well in the middle and add the oil, yeast mix and the rest of the water.

    Mix to a smooth dough.

    Knead on floured surface until smooth (about 5 mins).

    Return to bowl, cover and leave to double in size (about 30 minutes).

    Knead and stretch dough for a bit then flatten on to an oiled baking tray.

    Spread sauce over base. Added chopped veggies of choice. Heat oven to 200C/Gas 6 and bake for 20 - 25 minutes.

    I like pizza as the possibilities are endless.

    For chocolate substitute try carob and carob products.

    Calories are calories. You won't lose weight if you maintain your calorific intake.

    There is something called seitan, it is so good. It is like wheat protein I think, and you can do so many things with it. You can make chicken, and put sauces and things on it. there are so many recipes for it.. It is so good, and it tastes SO much like chicken. Wow. It is hard to think it is wheat protein. Look it up, really cool. For milk, you can use coconut milk, which is awesome, or almond milk. Or even rice milk. Vegan is so healthy and awesome! Good choice! Wish you the best!

    About the weight: If you are eating at the optimal healthiest, your weight will be at the optimal healthiest. So if you are eating a well balanced variety of fruits, veggies, and grains I wouldn't worry whether you gain or lose weight. It does not mean you are unhealthy.
