Get a pair of manicure scissors (or something tiny like that) and snip the shell along the back of the shrimp, making sure to cut down deep enough to open the "vein". Especially on very large shrimp, the vein can contain enough grit to be noticeable.

It is shrimp poop, but they are vegetarian.

What is usually done is slice the shell along the tract.

There are tools for doing this at the kitchen store.
