I need help with flour substitution?

I have a recipe for pumpkin bread which call for using 3/4 cups of all-purpose flour, but I don't have any. What I do have is oat flour as well as corn starch. I'm assuming a mix of the two would provide the best balance between taste and texture, but I don't know how much to put of each.

    When we were trying to find substitutions for wheat flour so my nephew could have his tortillas, we did some work with the various flours. This was before home computers and we couldn't find much help from the hospital dietitian, doctors or anyone else.

    It would help a great deal if you have some gluten powder to go with the oat flour. You can use the Oat Flour straight cup for cup and not mess with the corn starch at all. If you have the gluten, add about 1 tablespoon per cup of flour called for and it should work great.

    Best suggestion is to wait til tomorrow and go buy some all purpose flour before making your pumpkin bread, unless you just want to do the science experimenting to find the proper blend of other stuff.

    No can do, follow the recipe or your bread will not be bread..

    go buy some or borrow from a neighbor..#1 Rules is to make sure you follow the recipe and have all of the ingredients before making..=)
