you could make king cake, or sculptures (using paper mache is easiest and the most fun)

Buy beads from party city or something. Oh and research the history behind mardi gras and be creative like with voodoo yu could make a fake voodoo doll or buy one or something. Or show a clip from that disney movie with the only black princess and the frog.
