Joe Bonamassa barely makes your criteria at the age of 34. If you like the Blues this guy is a must.

Kenny Wayne Sheppard is another excellent Blues guitarist and is also 34.

If you like Metal, Avenged Sevenfold guitar player Synester Gates is excellent

Travis Stever of Coheed & Cambria is pretty good if you like a slightly more Progressive sound.

These three may not be your typical shredders or soloists, but I feel that they are truly pushing the envelope in terms of what a guitar can do.
