Many vegans became such because they dislike how the animals were treated, not because the food is not tasty, so it makes sense that they would eat foods that are tasty but vegan.
Meat also has flavor that we humans love: umami. It's a richness or savoriness that is typically found in meat-based dishes but can also be found in tomatoes, cheese and mushrooms. If crafted into a vegan dish, there's no reason why a vegan wouldn't want it--it's delicious!

They don't. Many people have different reasons for being vegan. Some popular ones are health, environment, etc. Maybe taste is a factor. But if you were not a vegan from birth, you would have tasted meat before. And bacon tastes amazing. What if I want to help the world, but still eat bacon? Then I eat fake bacon. Some people dislike meat harvesting (slaughtering) or the consequences of meat eating, but to dislike meat itself is probably only in some religions. Also, maybe tofu gets boring. It does for me.

Think about it: if there's no meat in it, and it taste's like "meat"... it's not really meat that you're tasting. Meat doesn't have a strong flavor all on its own. If you flavor it with vegetables, spices, and oils...it tastes like something familiar. So why is it a bad thing to flavor your vegan food with vegan spices? It's not.
And even if we did want our tofu to taste like meat, it still doesn't matter. A lot of people go vegetarian for ethical/health/environmental reasons... not because the taste of meat was bad.

It really isn't the fact that they dislike meat, it's just they don't find it humane to kill animals for food or for some other private reason. So they want to taste meat, and still have the flavor, without harming an animal.

Because vegans are not against the taste, but the murder.
It makes a lot of sense if you think about it.
Say you like the taste of meat, but you dislike the slaughter of animals.
So you have veggie meat instead of animal meat,
then you can get the taste you want without supporting the death of billions of animals that die every year to feed meat eaters. People can talk all they want about personal choice, but it's a fact that when you eat meat, you make animals suffer.

Mock meats were actually invented by meat eating religious people who couldn't eat meat during certain religious festivals. Since they didn't know how to cook without meat, they made their meat dishes with vegies and used things like wheat gluten to make something similar to meat. Vegans like me think this is awesome because it tastes delicious and is cruelty free, so why the hell wouldn't we eat it?
