I'm vegan and I eat Indian food all the time (my parents are Indian). It varies by dish, but I haven't had any issues veganizing what I eat. One of the reasons my transition to veganism was so easy was because most of my food was already vegan to begin with (since we don't cook with ghee, but rather olive and peanut oil).

If you have a specific dish you want to veganize, let me know, and I can help you out. There's also a vegan Indian blogger in Washington DC. http://www.holycowvegan.net/ she has recipes for vegan halwa! (Which is how I found her site to begin with). There's a dish called patra that my mom used to make with yogurt, and other things, but we sub alternative milk and a bit of lemon for the sourness to make it vegan.

It'll be harder at restaurants, but try Gujarati food (I'm Gujarati) instead of Panjabi food. My mom was complaining how I can't eat at a restaurant because there's nothing vegan there. But I always hated Panjabi food to begin with (too much spices..hahaha, no, really, my cuisine is considered the blander part of Indian cuisine).

http://www.manjulaskitchen.com/ also has some vegan recipes. She has the same culinary background as my family, so she makes a lot of the same dishes that we do (gujarati). It's pretty simple to veganize, and she even has a vegan section.

And tofu makes a wonderful paneer substitute. In fact, when I first saw paneer, I thought it was tofu.

Edited to add: Vegweb has an Indian food section: http://vegweb.com/index.php?board=473.0

I usually forget vegweb because they do a lot of things that go against taste (frequent use of margarine and faux meat, blech) but there's some legit recipes, such as channa masala <--my first Indian dish, so proud *tears* which CAN be made using kidney beans or fava beans instead of chick peas...

EDIT2:@EmmieJP<3: Based on your suggestions, I think that you should try corn pakoras. Soooooooo gooooood. http://smithasspicyflavors.blogspot.com/2012/03/sp...

The answer above me is much better but I just thought I'd reccomend Bombay Potatoes and Onion Bajis. I've been to many places and bought them from supermarkets, all that I've seen are vegan.
