is there a way to make my ricotta cheese mixture make curds after it is removed from the heat?
I heated the mixture to 185 degrees and added the lemon juice. It is not forming curds...is there anything I can do now to prevent from losing the whole product?

You can try adding additional lemon juice. If that doesn't work, try white vinegar. But sometimes it just won't work. The ricotta was probably a pasteurized cheese and heating it destroyed its curdle. It happens sometimes, especially if it is heated too long.
