How safe is it to eat refrigerated potato salad that contains a lightly boiled egg dressing?

I have a recipe for eggs that contains vinegar, dry mustard, sugar, sour cream and lightly cooked eggs, in a double boiler. The mixture is then used as the basis for the potato salad. The mixture is heated in a double boiler until the liquid is steaming and is beginning to thicken to the consistency of lightly cooked scrambled eggs. The thickening is then whisked away and the mixture is then mixed with the cooked potatoes. All of this is refrigerated over night to enhance the flavor. Is this safe to eat?

    Certainly. The whole point is that the eggs are heated sufficiently to kill off salmonella bacteria, and the vinegar adds acidity which helps retard bacterial growth. Still, it should not be left unrefrigerated for more than four hours. It should keep well in the refrigerator for about a week.

    Nobody should guarantee an answer. If there was harmful bacteria in the bowl you placed in the refrigerator, AND the temperature of part of the potato salad remained above 40˚F for several hours, then there is a possibility of food poisoning.

    The best way to improve your odds are to do everything you have already stated from your recipe -- and additionally, storing the potato salad in a way that it cools quickly.

    1. Spreading it thin on a flat sheet, rather than in a deep bowl;

    2. Covering it loosely rather than tightly.

    If the egg is cooked, i don't see the wear and tear in it... extraordinarily in the adventure that your toddler is used to eating table meals. My 14 month old loves eggs, yet we've never make an egg salad sandwich... it incredibly is a reliable theory incredibly. i might attempt it for lunch the next day :-)

    The eggs will be cooked enough to kill any bacteria, so it is perfectly safe to use that recipe. Also, most eggs do not contain salmonella. You just can't taste or see it, which is why it is recommended not to use raw eggs.

    Its okay to eat those. But don't do it often, leftovers aren't good for your health
