I make a roux with veg oil, add some hot veggie broth, when thick I add either soya, almond or coconut milk, season with salt and white pepper, a bit of garlic and onion powder, if I make veggie mac and cheese I use some soya cheese, a dab of vegemite for flavour and a bit of paprika to colour the sauce

without ANY type of milk? Why can't you use a milk alternative such as soy milk, rice milk or almond milk? I personally like to use a combination of rice and almond milk together (I find if I use just almond milk it has too strong of a nutty flavor)
Silken tofu might work as well
Maybe try browsing some online recipes for sauces for ideas that might interest your tastes
