If you have to choose one of the stories the little beggar might be a good one, it has quite a lot of characters and is reasonably long.
You could do about various stories- the *** and his ***, Ali Baba and the forty thieves (that might be a good one, it's quite long) Sinbad the sailor, the fisherman and the genie.
Or talk about the king's feelings changing throughout- he goes from loving and caring to hating and distrusting before gradually coming back to loving and caring again.
It is quite hard to fill seven to ten pages on any of them though!
