You could get him a "retro" or 60's candy gift basket.Amazon has plenty of them throughout the decades(from the 40's-90's etc..)or you could do a Google search if your looking for something better than Amazon's.It has all the cool candies from years past that are now longer found or readily available anymore.

The ministers in my town always give champagne as gifts, so I guess that would be appropriate

I would have a plaque done with your words imprinted expressing your gratitude and remembering things he has done not only for you,but for others as well.
