car insurance company doesn't want to give me much, what should I do?

Just a couple of weeks ago, I was side swiped and then hit in my rear on the express-way at about 45 to 55mph, while stopped trying to avoid someone who spun out in the middle of the express-way. It has been very stressful, for a week I could not work, my neck hurt like hell, I saw the doctor and had to take 1000mg of pain pills twice a day for 6 days. This has stressed my wife out, who is 7 months pregnant, of course the good news is I am alive and nothing is broken.
My next problem is that I had a custom car that I purchased when it was about 2 1/2 years old, it was sitting in the garage for a while and then I started driving it. I drive roughly 110 miles round trip to school and work, so for the past 30 months, I have put around 74,250 miles on the car, yes that is a lot of driving, so the car had 170,000 miles on it when it was hit.
The car is a 2003 Honda Accord EX Coupe, with all the options, has been completely customized with a one of a kind body that takes 30 days to make in Japan. It's over 10k in upgrades, plus $2k for the rims and tires. In a few years I was just going to put in a new engine, as you can see the body was in mint shape.
Now I don't expect the insurance company to refund all these expenses, that is understandable. However, I feel the offer I am getting is insulting. The car was in perfect condition, as you can see in the pictures.
They are offering me just a little over $5,000 for the car. I have looked for the past 3 days on-line and cannot find any Honda Accord 2003 Coupe for $5,000, let alone anything in the condition that car was in. The closest thing I saw that looked anything like mine, was a 2003 Honda Accord Ex Coupe with 174,500 miles and the dealership is asking $9,999 for it. Almost all of the 2003 Accord Ex Coupe's that I have seen on-line are priced between $8,500 to almost $12k.
So basically, with $5,000, I'll go from a 2003 Honda Accord to a 1993 Honda Accord. I have seen Civics on eBay that are in the early 1990's that are selling for more then $5k and Civics are lower end Honda's. Of course, there is nothing wrong with Civics, I have owned one in the past and loved it.
The way I feel about it, it seems that the insurance company just bases a price of a car on its mileage. For example, if I were to buy a brand new 2012 car for $45,000 and travel the USA for 6 months, put 200,000 miles on it, does that mean the car is now worth $15,000?
I am not asking for much, but I believe I should be able to at least be able to get something that is comparable, which would be a basic stock honda accord for around $8,500.
What should I do?

So Steven, so the idiot totals my car, and now I should go from a 2003 perfectly mint car to a 1998. I do not think so. How is that my fault? I guess then I just have to take what I get from the insurance company and sue for the difference from the guy who hit me.
Did you even look at the pictures of the car? Does that look like a $5000 car to you?
Where does one find a 2003 Honda Accord EX Coupe with all the options, bells and whistles for $5,000? As I said in my post. I have looked at Car dealerships... and they run from $9,999 with 174,500 miles... My car had 170k. If I would of put a new engine in it, then it would be pretty much a new car. It's 95% all highway mileage.

Have you looked up your car's value, considering its mileage, on kbb.com or nadaguides.com?
You are right that insurance companies base values on mileage. Basically, any expensive aftermarket add-ons are unknown and worthless to insurance companies. A $5000 car with $10,000 worth of add-ons is still only worth $5000 wrecked.
If you feel the insurance company is shorting you, you can always protest, in writing. You might just get some relief, but don't expect much.

You should spend less time looking at prices on eBay and more time researching the law. Car insuarnce companies are not allowed to pay you the amount that sellers are trying (and failing) to get on eBay. They are only allowed to pay you what the car is actually worth, meaning the amount that you really could get for it, in a regular, offline sale.
With $5000, you would not have to downgrade to a 1993 Civic. You could get a much newer Civic, maybe a 1998.
You could also get a Toyota Camry, which is much larger, for less money.
And, yes, if you put 200,000 miles on a car, that does mean that it is worth 1/3, or less, or what you paid for it.

talk to your lawyer or get one. Im sure he will be able to help you get reimbursed for everything.
