I use this substitute: 1 tbsp milk powder, 1 tbsp cornflour, 2 tbsp water
Or you can use 1/4 cup apple sauce for every egg,one banana in cakes or 2 tbsp cornflour.

I recently recommended substituting mayo for eggs in response to a similar question (3 Tbsp mayo = 1 egg). The asker gave me 'Best Answer', and said it's the best her cake had ever come out. Using mayo will make your cupcakes more moist, not more dense and heavy as has been suggested.

go buy eggs or don't make cupcakes!!
people on here insist on using oil, apple sauce, bananas, mayonnaise, and vanilla instead of eggs then want to know why their cupcakes didn't come out right!! Using anything other than what is called for is to be very disappointed in the heavy, dense cake results!!

Mayo works really well. I have used it before in cakes and pancakes and you can't even tell a difference.
