It's deduction, my friend. Psychiatrists are medically trained to recognize signs and symptoms so that they understand their patients better and can get an idea of what they're going through and what they're thinking. They often study body language as well. They use their knowledge to diagnose, and usually by what you tell them and what they observe from your body language they are able to predict your thoughts, or so it seems. It isn't always accurate, but because of their studies and their knowledge it often is. This is why they diagnose and talk to people for a profession so that they can help.
Mind reading is a myth, I personally do not think it's possible. Deduction and prediction based on knowledge are what make that effect of mind reading, all it is is making educated guesses.
If you want to learn how to do similar things as psychiatrists when they are able to correctly read someone, you can google body language and read up on it and learn how to read people's tones and behavior. It takes a lot of work and practice, and is not always dependable (you have to keep in mind that it isn't always correct, so you can't put your entire faith in your deductions), but it can be very useful for reading people and understanding them better.
It's a really interesting science, I'd like to learn more about it myself. Point is, it isn't mind reading, it's education! :)
Hope I helped, and good luck figuring it out!

I wish, or rather I sincerely "do not wish" I had the capability of reading someone's mind.
Reason: it would end-up leaving me in hot water, lead to arguments and irrational confrontations.
Have you ever heard the saying "I rather not know?"
Now the know how of psychiatric stars.
While in China along with my boss (in business), I heard an entire speech in Chinese by a plant manager there. After finger pointing, unpleasant facial expressions and other signs, my boss asked the Ph D (U. S. educated) Chinese person who was visiting with us: "What the heck did he say?"
The Ph D replied: "Oh, nothing!"
I told my boss: "Although like you I do not speak a word of Chinese, I could easily translate for you what the heck he said".
I said that, based on my visual observations, and I am very good at that.
Similar to psychiatric professionals, think how tarot and regular card readers can "predict" your future, after asking you a load of questions and observing your face (lol).
Nah, think about Eddie Murphy's movie where he could understand animals. Apply that to people, and I hope you realize it would not be pleasant. I am a firm believer I ought to be only concerned with what I think of myself, rather than what others think of me.

They understand body language, inflection, eye movements,
etc, to predict what will happen next.
