What can I make from leftover white rice?
I'm also making some boracho beans and we have tortillas. I want to make the rice into a dish thats mexican, but not tomato based. but i'll take all suggestions

Spicy Rice from leftover rice.
1 chopped onion
1 chopped green chilli (Optional)
1 teaspoon cumin seeds
1 teaspoon turmeric powder
2 teaspoon red chilli powder
2 tablespoon lemon juice
1 tablespoon oil or butter
Salt to taste.
Heat the oil or butter and add cumin seeds. When it crackles add chopped onion and cook and stir for 5 minutes.
Now add chopped chilli and cook it for 2 minutes.
Add all spices and salt and stir it.
Before you add rice, try to separate with hand as it might be stuck each other but it will be easily separated.
Finally add rice, keep stirring until it mix properly with the spices and turn off the heat when steam started coming out.
This rice my mum make all the time when we have leftover rice and we all love it. Good luck.

Do dessert. Rice Pudding
2-3 cups leftover rice
1 3/4-2 cups milk with 1/2 cup sugar and 4 tsp cornstarch mixed into the milk
1 tsp vanilla extract
2 tbsp butter
1 tsp cinnamon
1/2 cup raisins soaked in a sweet liqueur(opt)
add the raisins near last 5 minutes of rice pudding cooking, when it is thickened.
Start with the rice and milk+ sugar and cornstarch in a pot and cook on medium until mixture starts to thicken. Stir to avoid burning and sticking to the pot.
Add rest of the ingredients
Lower temperature to simmer and cook for 5 more minutes. Then , the pudding should be ready.

Rice Soup (chicken broth, chicken, carrots, rice)
Rice and Bean Burrtio (rice, favortie kind of bean, tortillas, hot sauce, cheese)

You can make burnt rice.
*Put the rice in a small bowl. (Make sure it's all tight)
*Get a pan & pour some olive oil in it
*Dump the rice in the middle
*Get a spatula & slowly press it down till it's all flattened out
*Turn the stove off. Take your spatula & see if the bottom of your rice is a golden brown color. If not, turn the stove on again. If it's a black color then... it's dead
*Once done, drizzle some soy sauce on it (Optional)
*Then take out & enjoy

dolmades (Stuffed Grape Leaves), stuffed peppers, fried rice, the list goes on and on. I know this sounds weird but I heat it up in the micro wave with butter and brown sugar and eat it for breakfast.
