trip to Vietnam and Cambodia... advice?

I'm planning a trip, alone, to Vietnam and Cambodia (3 weeks total) in the fall. Not sure if I'll do a partially escorted trip yet or not, but would love to hear any advice on accommodations, shopping, restaurants, etc. that anyone has. I'm still not sure exactly where I'll be going but I'd like to spend a few days in each location and then move on. Let me know if there's anything you think I should definitely include in the trip or should skip over. Thanks in advance for the advice.

Update:

Safety wasn't the reason. Usually when I travel I do some escorted tours at the beginning of my trip because I find that they tend to give you valuable information about the area you wouldn't get otherwise and sometimes if you tell the tour guides what you'd like to do, they can hook you up with discounts and personal suggestions of places to stay/eat/etc.

    Why do you want an escort? If it's for security then forget it. These countries are far safer than most.

    Places you really should visit are:

    Angkor Wat - Absolutely amazing temples.

    Phnom Penh - Really cool city with a relaxed vibe and nice riverside bars. Also where you can see the killing fields and torture chambers if you like.

    Hanoi - More relaxed Vietnamese city with great food and nice bars.

    Sapa - Beautiful scenery.

    Ha Long Bay - All the tourists go here and it IS worth it.

    Saigon - More hectic city but very fun as well. Also for a sobering time visit the war museum.

    Other cool places are mui ne, hoi ann, hue and sihanoukville.
