...turn your phone off before you go to bed and turning it back on the next day or just leaving it on all night?

Just leave it on. There isn't a difference. It's not gonna charge better when it's off

It uses more by leaving it on all night! Only a minute percentage is used by start up and sign off(power down).
If you want to keep up with battery usage it's best to download a battery saver app, such as "Battery Booster", or one of the the many avalible through Google Play Store.
Battery booster gives you the ability to monitor usage and taylor custom settings for maximum benefits.
