I had that same question so I used Google......... Essentially, Nike made them bright yellow to cast attention to them because Nike is not a sponsor of the Olympics (like Adidas is). So they pay their athletes that they sponsor to wear their Nike Shoes as they are classified as "equipment" instead of official team jersey/clothing.
