Does anyone have good suggestions for what to do with pork stew meat?

There is some in my freezer that I need to use fairly soon and I really don't have any good ideas on what to do with it. Suggestions and recipes are appreciated.

The easiest might just be to plop it in a slow cooker along with a container of fresh salsa--I like Casa Sanchez (or cooked bottled salsa I guess), then come back in 8 hrs, and serve it over rice.

I like to put a dollop of sour cream on top of each portion to mix in, which gives a little bit creamier mouth feel and also makes the chiles in the salsa less hot if desired.

Since beef is so high now, I make pork stew and pot roast. Just brown the pork well, then 1/2 cup red wine let it simmer out while scraping the pot, add a package of onion soup mix and a couple cups of water and start to simmer, meanwhile, peel and cut to bite size, carrots, potatoes, celery and a couple of quartered onions. Add to pot with celery and carrots on the bottom with onions then potatoes. Simmer until veggies are done, take out veggies and meat. Take a cup of coldwater and mix with 6 tablespoons of flour and one tablespoon of corn starch and whisk until blended. Bring stew liquid to boil and add flour/water mixture with a whisk. bring back to boil, cook one minute, take off heat and then add the meat and veggies and a can of drained peas. Serve with hot biscuits and butter.

This would be great braised (half covered in liquid then covered, cook low and slow) with chicken or beef stock and maybe add a bottle of dark beer, then serve it any way you like...an hour before it is done, add some potatoes, carrot, celery, and cabbage wedges and serve it like a stroganoff on a bed of noodles, or like a pot roast. For leftovers, shred it and re-season with barbecue sauce or a taco seasoning packet...for tacos or loose meat sandwiches on a bun.

Brown meat in a pot, add uncooked peeled potatoes, carrots, and whatever else is in the refrigerator. Cook until vegetables are tender. Season with salt, pepper, and add sweet-sour sauce before serving.
