"New Ipad" mistake in set up. How do I fix it?

I just received an Ipad3. While setting it up I was confused by all the options in E-Mail, Browsers, etc, so I simply ignored or checked "none". I figured I could always come back when I know more about the options and choose correctly. Now only a few basic apps are working and I can't find where to choose my settings. HELP!

Also if you have any favorite settings, I'd be glad to hear from you. To me they are all like hieroglyphics-(SP). I don't do well in a foreign language.

    There's an app called settings, click it, click email and you can set it up there.
