If I'm listing things we did, would I say nosotros paseamos, comimos, y jugamos, or nosotros paseamos, comer, y jugar?

Definitely the first one.
Whenever you want to use an infinitive - a verb ending in -ar, -er, or -ir - you're saying "to (verb)". In this case, it sounds insanely awkward to say "we walked, to eat, and to play."
