Do wallflowers get their nutrition from the mortar and detritus between the stones, from the stone itself,?

the stone itself, or both. I refer to the bright red and yellow wallflowers growing from European castle walls and from the walls of other old buildings.

Yes, they do. They are adapted to live in very poor soil and with a minimum of humidity. There thin but strong roots are able to uptake all nutrients they can find in their harsh environment, minerals from the mortar, organic stuff from bird droppings, dead insects or windblown dust . No wonder that "poor man's mustard" is one of its common names.
