Any recommendations for a Vegan Cookbook that is EASY to use?
For example, I don't want to go to a bunch of specialty stores to grocery shop. Mexican is ok. Asian food is not, I need low sodium.

"Appetite for Reduction" by Isa Chandra Moskowitz. All recipes are meant to be quick and the food is delicious. There are only a few specialty things and they are fun to make. It's what helped me switch to vegan and vegan cooking.

most of them. Tofu you can buy at a supermarket. If the recipe says you need agave syrup you can use sugar if you want. If it says an egg replacer, you can use flax seeds grind them and add water and you have a flax egg. If it says vegan sugar, check the brand and see if it's actually refined with bone char. If it says Earth Balance margarine, use your margarine that is vegan and doesn't have palm oil or is hydrogenated (some supermarket brands are). If it says you need arrowroot you can use cornstarch. If it says you need an oil, then any oil is fine, but if it says coconut oil specifically then that's the only one that needs to be coconut oil (but some like peanut/sesame etc are actually for the flavor, so don't sub them). If you use online websites that allow comments, if you read through the comments a lot of people make them and sub out ingredients so you can do what they do. Or look up the ingredient you don't have and see what substitutes you can use
