What is that slime (mucous like substance) under the skin on a chicken thigh that actually sticks to my hand?

It is a clear thin substance that I'm seeing more of, as the years go by, while I'm cleaning the food, that can only be described as slime. Mucous also fits cause it looks and feels like thick snot.

It is visceral tissue which covers organs and muscles. Just pull or cut it off before cooking the chicken. It could also be left on and it will dissipate and breakdown during the cooking process and will not affect the taste.

I had answered that question a few months back; It is called; Fascia. It's a strong layer of connective tissue between the skin and muscles underneath it.

If the chicken isn't fresh, it'll tend to stick.
