    Some do. I think only one I've ever made (out of a dozen different ones baked and chilled) had flour in it. I think that was the chocolate ripple baked one. I doubt chilled cheesecake has flour in it.

    To add extra insurance to a cheesecake recipe that doesn't contain cornstarch or flour, some bakers will add a small amount of starch, such as flour or cornstarch.

    The recipe I use has about 1 tablespoon of flour.
