Mexican party food help?

It depends on if you want something authentic or not.

For authentic, to make it simple you could cook a type of meat or two. Possibly look up a carnitas or birria recipe. Carne asada is easy to make as well. Just cut up some onions, cilantro, lemon and chile for the topping. Also, use corn tortillas (make sure they're not hard shelled).

If you want something that isn't authentic but a lot of people unfortunately still think is Mexican (ground beef hard shelled tacos, nachos, fajitas, chimichangas etc...). You can cook some ground beef with seasoning, make a nacho cheese melt in a slow cooker and put other toppings and make a taco or nacho bar.

You don't give specifics into what you like and Mexican food has way too many options to really pin any down.
