Gluten FREE lunch recipe ideas?
I was recently diagnosed with Celiac Disease. my school does provide gluten free lunch, but i worry about cross contamination and whether there is much variety of food selection. what are some wheat/ gluten free ideas to make for lunch that i can bring to school? i already have some gluten free items like rice cakes and soups. any ideas on easy lunch thats simple as PB&J? and where ingrediants can be bought if anyone suggests anything?

healthy gluten-free lunch recipes are more than your average soup and salad. They have healthy proteins and fiber-packed vegetables to add extra flavor and nutrients. They have included grain and starch alternatives to wheat that give you the energy you need to power through your afternoon. thank you.....!!!!

I have this. I make everything from scratch at home. Your right CC is a big concern. Many items labeled Gluten free are not. Some are CC some of the time but not always. So much of the time it is just a gamble with anything made by anyone else.
Good news M&Ms are GF but only the regular plain and P-nut types.
Stay away from tuna that has "vegetable broth" Also products with modified food starch. Most GF breads come frozen and are lousy if you just let them thaw. If yo crack a frozen slice off and microwave it just the right amount they are really good. Most also make good toast.
Skip most GF pastas. I find most are not that good and even the ones that are do not save well for the next day once cooked. Instead I use rice noodles. They take longer to cook but are really good.
Good luck it will take time to adjust but you will with time.

My family eats gluten free off and on for health reasons. We don't have celiac but are affected by foods with a lot of wheat in them. What we do for lunches a lot of the time are deli sandwiches with romaine lettuce leaves as the bread. You can make many types of gluten free sandwiches by replacing the bread. And being careful which condiments you use (mustard is always a safe choice)

Roast Beef Open Sandwiches Glutino flax seed bread - toasted fresh organic avocado cold roast beef, lightly salted slices of fresh organic red pepper sliced of pickled banana peppers fresh organic baby arugula leaves (or baby spinach) Layer ingredients in order as listed and enjoy with an ice cold glass of water. Tip: If you have trouble buying Gluten Free Bread, this would also be great with grilled polenta or on rice/corn crackers Or Chicken Skewers – Baked then grilled Dice chicken breast into bite sizes cubed and thread onto wooden skewers. Place on a baking tray and top with fresh garlic, salt and pepper, a dash of chicken stock. Drizzle with olive and bake in the oven on 350F for approx 10-15min. Turing half way through. Turn oven over to broil and grill a further 5 mins or until brown. * If using wooden skewers, soak in water for 10mins before threading with chicken.

Some quick ones:
GF corn chips with hummus or refried beans to dip them in.
round white rice wrappers - these are crispy and often found in the Asian section of a grocery store - can make spring rolls with. They are soaked in water for a few seconds and then wrapped around the inside ingredients, like a raw eggroll. Things like cucumber, avocado, cooked chicken, GF soy sauce, cilantro, carrot strips, that sort of thing are good in the middle
chex cereal is GF - take a thermos of milk and have cereal for lunch, just for fun. :-)
roast chicken, roast beef, cold fried chicken using potato starch instead of flour. mashed potatoes
