If you're using a recent Internet Explorer then pressing Ctrl+Shift+P will open an InPrivate Browsing windows. Using that to open YouTube will show you the signed-out pages.
You can use the menus to open InPrivate browsing and similar features are available in other browsers.
InPrivate hides you cookies from the server, and it is those that web sites use to know you are signed in. You won't be able to sign in to GMail in the InPrivate session and then see vanilla YouTube because Google own both sites and share cookies between them.
