Coyote was both a creator god and a trickster.
To many indigenous tribal people, the coyote was a sacred animal.
As to the ' giant ' I take it as your reference to the giant monstrous beaver Wishpoosh.
If my assumption is wrong ..... so sorry for the error.
Nevertheless, I will provide you with the version that is possibly nearest to what you want.
Here it goes.
The Nez Perce people believed that Wishpoosh was a giant monstrous beaver who ruled the primeval lake, but he never let any other creature go near to the lake.
One day, Coyote the trickster went fishing in the lake. Wishpoosh leapt upon him and attacked ferociously.
They struggled for some time, and as they wrestled and fought, they created mountains, gorges and canyons.
Wishpoosh was losing all his strength, so he dived deep into the lake to swallow as many fish as he could. Coyote floated on the surface as a tree branch to take a rest.
When Wishpoosh realized this, he surged toward the branch and gobbled it up.
Now inside Wishpoosh, Coyote turned into a pine needle and stabbed Wishpoosh in the heart.
Thus, killing Wishpoosh, and he took the carcass up to the shore and cut it into a thousand pieces to make the first humans.
