Why would you want to hull tomatoes?

    Some varieties, especially the newly-popularized 'ugly' or heirloom tomatoes have a substantial hard green core in the top 50% of the fruit. Your recipe author was probably covering that possibility.

    The hull (that light-colored part nearest to the stem) is hard and not exactly tasty. Also, you hull tomatoes when you want to stuff them.

    the core right next to the stem is called a hull and it isn't very tasty or particularly edible in most tomatoes. the exception being cherry and grape tomatoes.

    Some people don't like the tough bit in the middle - can't see why you'd bother though :)
