Most places use either Gunpowder a type of Oolong or Jasmine tea.

I've even heard of oolong tea being called "Chinese restaurant tea" - just by way of ID.

It can vary per restaurant. Best is to ask the restaurant you had this tea, and they should know. Most likely it is a type of Oolong tea, but there are multiple types such as TieGuanYin which is a popular Oolong.
