Should I ask her to hangout again?
I met this girl a few weeks ago who works at a catering company with me but only works during breaks(college). We seemed to have a mutual interest in each other so after finishing up work last night I texted her:
Me: Whatcha doin tonight?
Her: Not sure I'm going back to unload and all that
Me: That's cool. If you end up being free tonight let me know
Her: I will:)
Now I know that she did have to unload but was it a nice way of rejecting me? I could understand why since we go to college in separate places but I was just looking for something casual. So should I ask her to hang out later? Or just drop it?

No, it wasn't a way of rejecting you. When someone asks "Whatcha doin tonight", they always don't put together that you want to hang out. They may think you're just curious as to what they are doing if you weren't forward about hanging out. Also the way she replied to your let you know message, if you feel she has mutual interest and everything is cool between you two, don't trip man. Ask her to hangout again, just not right after you've asked her once. You could just ask her if there is a day she is free, and that you'd like to hang out with her sometime. In my opinion, she'd appreciate the fact you are working around her schedule instead of being pushy about it. Best of luck!
