Why are my apples crunchy?
I make apple pies from scratch fairly often. I always use the same recipe, oven temperature, and baking time. When the pies are finished the apples are sometimes soft and other times I can hear them crunching when other people are chewing.
Is it the type of apple I'm using, or could something else be causing it?

Well it depends on how thick you cut the apples but I have never heard of a certain type of apple that is crunchier or softer than others. if you have suspicions that the apples are too crunchy, just bung the pie back in the oven for 10 minutes more

Well they are crunchy because long ago there was an apple named jack, he was very soggy and sad. so one day he made a potion that made all apples crunchy. so now if an apple is soft jack has to get skinned for doing wrong, then grow his skin later on. Now dont make apples soggy and soft or else jacks skin will be skinned off. we dont want that..
