I make apple pies from scratch fairly often. I always use the same recipe, oven temperature, and baking time. When the pies are finished the apples are sometimes soft and other times I can hear them crunching when other people are chewing.
Is it the type of apple I'm using, or could something else be causing it?

Quite often when I make apple pie, after I take it out of the oven, the apples fall and leave a gap under the crust. I always make a lattice crust so I don't think it's a steam issue. I've tried different apple varieties, Jonathan, Granny Smith, Rome Beauty, Cortland, etc. Sometimes it happens and sometimes it doesn't. Do you have any thoughts?

I recently switched to u-verse. I have Yahoo for my e-mail with an att.net address. When I send out e-mails to people in my address book most of them come back with the mailer daemon saying "not a valid address" or (for one with an att.net address) "not one of our customers". These are the same addresses that I used before switching to u-verse and never had a problem. Contacted att and they say it's a Yahoo problem. Does anyone have any thoughts? Thanks,
