Water blanch for 30-45 seconds, drain and shock in ice water, heat your wok or frying pan with a little oil, fresh garlic and some fine diced onion, cook until fragrant, add the drained and dried beans shake the pan, now you can use plain soya sauce, but most Chinese restaurant use oyster sauce but this is optional, a spritz of sesame oil and there done, I worked in Singapore as chef, and have friend who run Chinese restaurant here in Canada, you can do the same with broccoli, asparagus, chinese veg like bok choy and nappa cabbage to is nice this way

Use the long thin green beans. Drop them into boiling water and leave them for a minute, then drain off the boiling water. Cover the beans with cold water and let them sit for a couple minutes. Then, drain them in a colander and pat them dry with paper towels.

In a wok or heavy skillet, heat sesame or peanut oil with minced onion, garlic, and sliced mushrooms. (Mushrooms are optional.) Add the green beans and cook 5 minutes, turning and stirring almost constantly, Add soy or teriyaki sauce and black pepper. Serve with hot sauce.
