What is a healthy (1200 calorie) vegan diet?
Please EXCLUDE vegetables in your answer. I have a reason for this, so please don't include them for now. Please give an example of a healthy (1200 calorie) vegan diet :-) I will give "best answer" to the person who I feel deserves it based on how they answer the question.

TO be perfectly honest I do not count calories.
BUT, you can do the counting if you take from these foods.
CUp of oatmeal with a few almonds and soy milk.
A small bowl of lentils ( it's a fruit)- use soysauce or mustard as condiment. Soy sauce lives for lentils..
2 Slices of pumpkin, with seeds toasted. With peanut soy sauce dressing. Hmm, maybe I just love soysauce, or better yet, tamari.
Tomato, zucchini and cucumber garlic salad with bean sprouts ( - fruit again-spouted foods are very very good to eat).
Sliced avocado, cilantro, lime juice. Cilantro is techincally a herb not a veg.
Tofu miso soup with nori and buckwheat noodles ( again, not a veg, it's actually a grass.)
Sweets-a few dates, some cherries, a kiwi.

No clue.
I'm vegan and shoot for 1200 a day, but vegetables make that up almost entirely.
Um. Maybe a couple hundred of healthy fats from nuts and seeds with a piece or two of fruit now and then? I'm lost as to what a vegan would primarily be eating if not veggies. Grains? Fruits? Sounds like a great way to get fat and diabetic.

Why not just go Fruitarian and eat all the calories you want and stay fit and thin all year long. Read the 80 10 10 diet by Dr. Doug Graham. You won't regret it.

No diet of 1200 calories is healthy. You need at least 1800. A bit of exercise and little or no snacks,.sweets and fizzy drinks.
