Why is my 1997 GMC pickup making a "gurgling" sound?
Everytime I turn off this little beast, it sounds like it's drinking!! A gurgling sound comes from roughly behind/below the glovebox.
What's going on? Why is my truck thirsty?
It has 300,000 miles on it but otherwise drives beautifully!

I think it's coolant being pushed into the reservoir from the radiator. It won't hurt anything but you might be due for a new radiator cap.

The heater runs on coolant water (coolant water is in the block and radiator). There is a heater valve that causes coolant water to flow through your heater core (below and behind your glove box). The heater core is the thing that heats your passengers.
If that heater valve is malfunctioning, and doesn't shut off completely, it will drip water through the heater core. Those valves commonly malfunction, so that is likely the cause of the sound.
If your trunk's cab (where you sit) is not getting excessively hot, I'd suggest ignoring the sound, and leave things as they are.
If water flows through the heater core, when you don't want it to, it will merely cool the engine more effectively (which is the function of the radiator and fan).
