Single people, do you bother to cook for yourself every night?

Every day I say to myself "Right, tonight I am going to cook something really nice for myself" but inevitably I end up eating ham and cheese toasties. The B/F says I should cook as it is healthier and cooking for yourself shows you care about yourself, I just cannot be bothered when it comes down to it. Do you cook from scratch every evening a decent meal?

    I don't cook for myself every night, usually because when I do cook, I have left overs for a day or two. But yes, I usually eat home made meals.

    Some things are really easy...say salmon is on sale. Get a fillet and some veggies, like fresh green beans or asparagus. Wrap the veggies and fish together in foil w/ some olive oil, garlic and pepper...plus dill on the fish and then bake it. One meal, not a lot of dishes, not a lot of work...and healthy.

    Or cabbage, it's healthy. I'll make rice and have it left over in the fridge, fry up some cabbage, toss is left over rice and make fried rice with cabbage...add an egg for fried egg rice. Its very quick and easy.

    Pastas are also easy...just boil some noodles, I've been getting whole grain lately and they're tasty. Then add some sauce. For a quicker meal, I use jarred sauce. If I'm in the mood for meat, I'll brown some italian sausage in a skillet. In any case, I also cook up some mushroom, onion, and fresh garlic together...then add the jarred sauce and simmer.

    When I was single I wouldn't cook too often. Sometimes it was just a bag of chips or Subway or a PB&J. Other nights I would cook pasta and eat that for like 3 or 4 days straight until I got sick of it.

    i really try but its hard to cook for just one person. I am trying out the idea of making my own frozen dinners with the leftovers from some of the things I cook. I am surprised that they are quite good. Soup, spaghetti, meat loaf all freeze well. that's all I have done so far.

    I love myself, but I don't always cook for myself. I'm a single person with a job and a house to clean. Who has time to cook?

    I am single and cook for myself every day because I like to eat well (not lots). I am working on putting together a cookbook of recipes for the single person...because I do not like to eat left overs. I have such cute little casseroles. I make 4 inch cakes...little 6inch pies, 2 biscuits or 2 pancakes.....it is fun and delicious.

    CHICKEN FRIED RICE (1)

    1 green onion, chopped

    1/2 TBS. Soy Sauce

    1/2 TBS. Brown Sugar

    1/4 cup Chicken Broth

    1/2 tsp. corn starch

    In a bowl mix soy sauce, brown sugar, chicken broth, onion and corn starch.

    Make sure the mixture is well combined and set aside.

    Fried rice

    1/4 cup shredded cabbage

    1/4 cup chicken, diced

    1/2 cup cold, cooked, rice

    Salt & Pepper to taste

    1 TBS. vegetable oil for stir frying

    Heat 1/2 TBS. oil in saute pan or wok on mediium-high to high heat. When the oil is hot, add the shredded cabbage and the diced chicken.

    Stir-fry briefly, until chicken is cooked, seasoning with salt & Pepper if desired. Remove from the pan.

    Heat 1/2 TBS. oil in the pan over medium heat. When the oil is hot, add the rice. Fry the rice, stirring continually to separate the grains.

    Add the chicken and the cabbage back into the pan with the fried rice.

    Stir in the stir fry sauce. Remove the chicken fried rice from the pan. Serve.

    TUNA CASSEROLE (1)

    1/2 cup elbow macaroni...cook

    1 T. butter

    1 T. flour

    1/2 cup milk

    1/2 tsp. instant chicken boullion, dissolved (optional)

    1 slice cheddar cheese cut up in small pieces.

    1 small pkt. tuna (3 oz.)

    Heat above until cheese is melted. Add to the cooked macaroni. Pour in casserole dish

    and crush 1 saltine cracker, crumbled, over the top. Dot with butter and put in 400 degree

    oven for about 20 min.

    SPAGHETTI SAUCE (1)

    1 (6oz) can of tomato juice

    1/8 teaspoon of sweet basil

    1 tsp. of sugar

    1/8 teaspoon of salt

    dash of pepper

    1/8 teaspoon of onion salt

    1/8 garlic powder

    1/4 teaspoon of italian seasoning

    1/4 teaspoon of worcestershire sauce

    Combine all in saucepan and bring to a boil.

    Reduce heat and simmer for 10-15 minutes..

    Now you can substitute all the fresh ingredients with powders or you can go completely fresh with all ingredients...

    Meatballs

    ITALIAN MEATBALLS

    3 oz. ground chuck

    1 Tbs. dry bread crumbs

    1/2 Tbs grated Parmesn cheese

    1/8 tsp. Italian seasoning or oregano

    sprinkle of. garlic powder

    1 Tbs. mayonnaise

    In medium bowl, combine all ingredients; shape into 3/4 inch balls.

    Pour equal amounts of vegetable oil and olive oil into a skillet to a depth of 1/4-inch. Heat the oil. Very carefully, in batches, place the meatballs in the oil and brown them well on all sides over medium-low heat, turning carefully with a spatula or a fork. This should take about 10 minutes for each batch. Don't crowd the meatballs. Remove the meatballs to a plate covered with paper towels. Discard the oil but don't clean the pan.
