How can I make this recipe gluten free?

I have a recipe for Anginette cookies that I really want to make gluten free. I have celiac disease and I can't eat the wheat in them. I was wondering if I could just change the 3 1/2 cups of flour(the only gluten product in the recipe) to 3 1/2 cups of gluten free all purpose flour. Would that be ok? Do I need to add xanthem gum to the recipe also?

Thanks so much for the help! xx

Update:

Also tell me how much xanthem gum I will need if any :)

I would use rice flour, potato flour or tapioca flour. With tapioca you usually use it with other flours, like rice. It makes the end result super soft. No you won't need xanthem gum. I've made gluten free cookies, breads and such without it.
