It does not seem that the Fry-Daddy oil line it deep enough to fry much? Am I wrong?

    The oil level rises some when stuff is put in it.

    You really only need about 2 to 3 inches of oil to deep fry something. And as you add food to your oil, the level will rise a bit. Don't over-fill. You don't want it to over-flow or be too full when food starts frying and possibly splattering.

    the oil line is fine. don't overfill what you are cooking just be patient. to much food in the basket will not cook evenly. Also "peanut oil" is the best for deep frying. It does not transfer flavors from food to food and can be used over and over. Enjoy!
