How do animal trainers train dolphines and other sea animals to do tricks?

I'm writing a story entitled "15 Shades of Gray". It's about a bored homemaker who meets a mysterious stranger. He paints her gray and teaches her to swim like a trained dolphin. She learns to jump through hoops, balance a beach ball on her snout, and even say simple phrases like "So buddy, what are you in for?"
