  • Sorry - US measurements, but really simple, so probably easy to convert. This brownie recipe has been made by my family for over 50 years. There have been a couple revisions over time (chocolate chunks, for example), but it's always been amazing.

    Brownies

    2 ozs unsweetened chocolate

    1/4 c butter (1/2 stick)

    1 c sugar (I use 3/4 cup because I like them less sweet)

    2 eggs

    1 tsp vanilla

    1/2 c flour

    1/8 tsp salt

    1/2 c chopped walnuts (or pecans) even better if you toast them first

    1/2 c semisweet chocolate -- chunked from a bar (or chocolate chips if you don't have bar chocolate available)

    Preheat oven to 325. Line 8 or 9 inch square pan with wax paper, butter paper. Melt unsweetened chocolate and butter in medium pan. Add sugar, eggs and vanilla, mix. Stir in flour, nuts, chunked semi-sweet chocolate and salt and pour into prepared pan. Bake about 25 minutes. (I go for slightly underbaked - that way they stay nice and chewy). Cool in pan on rack for 5 minutes, then flip over out of the pan, peel off the wax paper and continue to cool on rack. Eat them quick or cover them up tightly once cool so they stay chewy.

    Ice Cream Pie

    9 graham crackers, crushed

    3/4 cup salted peanuts, finely chopped

    1/4 cup white sugar

    1/4 cup butter, melted

    1 quart vanilla ice cream, softened

    1/2 cup crunchy peanut butter

    1/4 cup chopped salted peanuts

    Preheat oven to 375 degrees F (190 degrees C).

    In a small bowl, mix together crushed graham crackers, 3/4 cup finely chopped peanuts, and sugar. Stir in melted butter or margarine. Press mixture into a 9 inch pie plate.

    Bake crust in preheated oven for 8 minutes. Chill.

    n a medium mixing bowl, mix ice cream and peanut butter together on medium-low speed until combined. Pour mixture into chilled crust. Sprinkle with 1/4 cup chopped peanuts. Freeze for at least 6 hours. Remove from freezer 10 minutes before serving.
