It depends on what you mean by animal symbol.
The coat of arms of Norway is a crowned, golden lion rampant holding an axe with an argent blade, on a crowned, triangular and red escutcheon. This is a common symbol in heraldry, and has been used in Norway since 1280 despite a conspicuous lack of lions in the region...
The national bird of Norway is the White-throated Dipper. It was voted in by radio listeners in 1963, but it has never been officially affirmed by any government action.
Other animals that are associated with Norway are the Fjord Horse and the Norwegian Red Cattle.
Other countries also associate the Moose with Norway, as there are large herds of them here. Road signs warning about moose are very popular among tourists, and many souvenirs are made with that symbol.
The brown rat is also associated with Norway, and was given the name Norway Rat [Rattus Norvegicus] in the 18th century by the English naturalist John Berkenhout. He assumed it had entered Britain from Norway, but ironically at that time it didn't even exist in Norway.
