Need recipe ideas for film crew/craft services?

Family member is doing a film project for school and will be shooting at my house all day with about 8 crew and cast members. I would like to set out more than basic coffee, bagels and muffins.

But it is a large crowd with wandering times they can swing by for food so I need ideas that can sit out for 3+ hours, be microwaved, etc. but be safe. These are also young actors and students so while their metabolism could handle sweet and fat - they probably want healthy options.

What I have planned is:

* Coffee (starbucks travler), OJ, Lemonade

* Wheat english muffins, plain bagels, 1 low-fat Cream Cheese, 1 flavored Cream Cheese

* Low fat yogurt in a bowl with ice

Thats all I can come up with.

I could do a big bowl of scrabbled eggs, perhaps with pepperoni? Sausage or bacon seems wrong.

Any breakfast casserole dishes you could recommend? Not sure I could do Quiche but need something I can setup the night before and then cook in oven in the morning so it's ready when they show up.

Again - these are all students, young people who are helping with a university film project for a relative of mine. Seems like "thanking them with food" would be nice. But some of the nicer dishes tend to need to be eaten fairly quickly after being cooked, and this wont work for a "Craft Services" situation. Any suggestions?

    If it's cold outside and they will be working outdoors, a crock pot of chili or soup can be very welcome. Make sure to have small disposable containers and cutlery for it, unless you have lots of small bowls and can wash them as needed. Quiche might be an excellent choice for breakfast, and it doesn't need to be hot. Room temp is fine for quiche. If you do scrambled eggs, you're going to need a way to keep them warm if they aren't all served at once. Same for bacon or sausage.

    Platters of fresh fruit, veggies(with a dip), cheese, and cold cuts are good. Everything should be cut to serving size so they can grab it and run. Toothpicks can be handy for things like that. Make the amounts small enough that they don't sit out all day but can be replenished as needed, though none of those are going to spoil in less than a few hours and even then only the meat is a concern. If you serve something like yogurt, individual size containers are the way to go. Sandwiches can be made and cut into quarters for easy "eat and run". Unless it's 85F where you are, they will be quite safe to leave out for a couple of hours.

    Have some dessert stuff like cookies or brownies.

    Plain water is always welcome as a drink.

    Keep in mind that aside from breakfast and if they actually all stop for lunch, all they will probably have time for is snacking. Have paper napkins and a box of wet wipes right on wherever the food is being served.

    Stuff that needs to be microwaved is, as often as not, merely a nuisance. You have to stand there and wait your turn at the microwave while they wait for you on set. Better to have things that are kept heated, like the chili in a crock pot, or that can be eaten cold.

    I have worked on hundreds of films, as a union actress, and production person--The quality of food usually reflects the budget of the film! Since this is a student project, IE you are not being paid, I would suggest simple, and easy options, or a donation from your family member---The traditional choice for breakfast is: Bagels,muffins, creme cheese, sliced red onions, salmon, if you can afford it, try salmon bits on sale at the deli, fruit, coffee, tea,bottled water, soft drinks, .if you feel the need for eggs, make a platter of some deviled eggs. For lunch I would suggest a platter of cold meats, sliced cheese, bread, mustard, mayo, greens, sliced tomato's, cole slaw, potato salad, and a vegetable platter with a ranch dip---For snacks, have chips, dips salsa, bowls of nuts, pretzels,and cookies---Dinner can be easy with pizza, and salad---most of these things can be bought at Trader Joes, Whole foods, or Costco-Remember to have lots of napkins, paper plates, cups, and a plastic table covering,Take lots of pictures, and hopefully you will have a cameo role or bit part, in the film- Have fun,relax, and keep your sense of humour!

    Appetizer: Garlic Parmesan Stuffed Shrooms 10-15 mushrooms 4 Tbsp Butter 1 1/2 c Italian Bread Crumbs 2 cloves garlic crushed 1/3 c Grated Parm cheese 1/2 tsp Oregeno 1/2 pasley salt and peper to taste 1. Seperate mushroom caps from steams and then chop up the steams real small. 2. In a skillet melt the butter and add the garlic and cook till light brown. Add mushrooms and cook 2 minutes. Add breadcrumbs, Oregano, Parsley. Cook until breadcrumbs start to brown. 3. Add the cheese and mix. Add salt and pepper to taste. 4. Let cool slightly and then stuff the mushroom caps with the mixture and bake for 10-15 mins. Until crust is golden brown. 5. Top with some parm cheese and serve. Main Course: Chicken and Brocolii Alfredo 2 Boneless skinless chicken breasts 1 lb Fetticine noodles 3 c Brocolli 1/4 c Tequlia 2c heavy whipping cream 1 stick butter 1c Mozzerella cheese 1c parmesan cheese 2 cloves garlic, smashed 1/4c small onion, diced 1/2 tsp oregano 1/2 tsp rosemary salt and pepper 1. In a skillet cook the chicken breast with a little bit of oil(i prefer olive oil). Season with salt and pepper. Cook until almost completely done. Add. the garlic and onion. Meanwhile, start the water for the pasta. 2.In sauce pan combine the whipping cream, mozz. cheese, parm. cheese, butter, oregano and rosemary. Cook until creamy. 3. Cook the brocolii in one of them steamer bags in the microwave. 4.Add the tequila to the pan with the chicken. Cook about 5 mins to let the alcohol cook off. 5. Once everything is cooked in their seperate pans, combine the the large skillet the chicken was cooking in, toss till fuly combined and serve with some garlic bread. Desert: Simple Strawberry Cream Tart 1 sheet frozen puff pastry 10-15 strawberries 1 1/3 c of cool whip 1/2 c cream cheese 1/2c sugar Whipped cream for topping 1. Cut the puff pastry into 3x3in squares. And cook as directed. 2.Clean the strawberrries and cut in to 1/4 for large starwberries for smaller ones just half em. 3. Toss the strawberries with the sugar and set aside. 4 Mix the whipped cream and cream cheese together. 5. Once the puf pastries are done, let them cool to room temp. 6. Then start off with a square of the puff pastry on the plate add the cream mixture and a few strawberry pieces and then another pastry piece and some more cream and berries then one more pastry. Top with PLAIN whipped cream and a few strawberries to garnish. Serve. All recipes serve 4

    Pizza ALWAYS wins- for students: cold, microwaved, and etc. Just have better selection than just pepperoni and/or cheese.

    pumpkin muffins always go over big and go well with cream cheese and they are easy to make. blueberry muffins are good and you can use a mix.
