If matter can not be created, how do we have matter?

No body knows for sure, however there is an idea.
If you take all the negative energy and positive matter in the universe, and add them together, you get 0.
If you take all the positive charge and negative charge in the universe and add them, you get 0.
If you add up of the spins of the galaxies, you get 0. So, it takes no energy to get a universe.
So perhaps, the Big Bang came from nothing.
Some people think the Big Bang is when two universe combine together into a bigger universe, or when a universe splits into two universes like bubbles.
However, no one knows for sure how matter is created.

Your question can be answered by E=MC^2.
In the beginning, there was no matter, only energy and light made up of photons. The particles like photons, bosons etc can decay into particles and antiparticles. Some have enough energy to decay into massive particles. All the matter in the universe came from energy. Check out the link below.

Acccording to quantum theory, matter and energy do pop in and out of existence at the quantum level. If that's not creation I don't know what is.
