Just put Hong Kong will be fine. HK has been an island in S.E.Asia on her own for 160 years, post office all around the world knows where HK is situated. Putting "China" behind will be more confusing.

Not quite, it is part of China but has special political status. Basically, Hong Kong was run by capitalist Britain, but then reverted to Chinese rule. Rather than turn it into a Communist city, the Chinese realised that it was better left alone because capitalist Hong Kong would bring in a lot of money for China's economy. As a result, Hong Kong was allowed to continue as a self-governing province within China with its own money, governor, laws, and passport stamps. Write Hong Kong, China.

Hong Kong is it's own jurisdiction. Which their laws are made locally and the only influence legally from mainland China is in the election of officials (half are appointed by the mainland Chinese government)
For addresses, you address Hong Kong like a country as it is it's own postal location.
just as with phones, it has its own dialing code
For travel they have their own visa system so you need separate visas for China and Hong Kong.

Just leave it as Hong Kong and don't write any country. It is a seperate entity under Phone, Internet, Postal or any UN organizations.

hong kong was a part of china from 221 BC to 1848. Then the British took over, it became a british colony since then until 1997, when china took it back.

No HK is not a country but it practically is. Mainland Chinese has to have a passport-like travel document and obtain visa to visit HK. In a way HK is like Scotland in the UK, not technically a country but enjoys great extent of autonomy and has its only government and jurisdiction
