I have chicken breasts and rice. Any interesting ideas for dinner?
I've got chicken breasts, rice, and a not particularly large number of other basic ingredients. I don't want to do a chicken and rice casserole (unless you have a particularly amazing recipe for one), or a stir fry, but I'm just completely lacking inspiration. Plain ol' baked/sauteed chicken and regular rice doesn't sound very good, I need something new. Inspire me!

Yeah I have one!! I'll go step by step ok?
1. Cook the chicken breasts for 40-50 minutes with the oven on 350°
2. Start cooking the rice as you usually would
3. When the chicken is done cover it in a think layer of butter and olive oil (I know this sounds gross but it tastes amazing!) and put some of the rice on top of it, let it cool, the rice will stick/stay on the chicken after about 5 minutes of cooling.
4. Put some lemon juice on the chicken and rice for some flavor
5. You should add only a little of pepper or a lot depending on how you like it
6. Now put some chives or cilantro in the rice, mix it around we'll

Curried Chicken Breast
Ingredients
1 tbsp. olive oil
2 medium cloves garlic, minced
1 large onion, minced
1/2 lb. boneless, skinless chicken breasts, cubed
1/4 cup water
4 tsp. curry powder
1/4 tsp. cayenne pepper
1/2 golden, seedless raisins
1/4 cup apricot preserves
2 tbsp. cornstarch
2 cups plain nonfat yogurt
1/2 tsp. coarse ground black pepper
Preparation Instructions
1. Pour oil in large skillet. Sauté garlic and onions until both are golden. Add chicken cubes and sauté until browned.
2. Add water, seasonings, raisins and preserves. Simmer, uncovered, 15-20 minutes, until chicken is cooked through, stirring occasionally. The liquid should be mostly absorbed.
3. Measure cornstarch into a small bowl. Add yogurt, stirring until cornstarch dissolves. Add mixture to skillet, stirring to combine. Simmer, stirring continually, until the sauce thickens, but do not boil. Season with pepper and serve.

I'm thinking of grabbing a pizza or some Taco Bell on my way home. If I were you, I would probably either order out or have a Chinese person come over and help you prepare something delicious with rice.
